Eloisey Mac & Cheezey

Tried and true DAIRY FREE macaroni and cheese
(Purple is Eloise's favorite color)

Ingredients: 
Noodles 
Oil (or nucoa) 
Flour 
Rice Milk (or other milk substitute) 
Salt
Daiya Mozzerella Shreds (or other cheese alternative)** Feel free to add any spices you enjoy as well, sometimes we add garlic &/or ground mustard.


*Cook your choice of macaroni following package directions

* While noodles are draining mix together
       
                    ~1/4 cup oil (we use either olive oil or nucoa) **if using nucoa, melt first**
                    ~1/4 cup flour (rice flour works great if you want wheat free)
                    ~Approx 2 cups milk substitute ( we use rice milk)
                    ~Salt to taste
* Put sauce mixture in rinsed out pot from noodles and heat on medium until boiling, stirring often. 

* Let boil for 1 minute, stirring continuously

* Remove from heat and add approx 1/4 cup cheese alternative (we prefer Daiya Mozzarella Shreds), and stir until melted

* Add noodles, mix, & ENJOY!

*** This recipe has completely replaced any other mac and cheese in our household. My kids that do not have a dairy allergy prefer this as well, even over Kraft!***
